recipe > the easiest salsa dip ever


So far, I am 'two for two' with this recipe - meaning that I've made it on two separate occasions for two totally different groups of people, without having any leftovers to take home. One of my aunts even asked me for the recipe a couple of days ago. Which hasn't happened before (at least, not lately anyways).  And best of all, it will only take you about six minutes to make. That, my friends, is the sign of a successful recipe.


Ingredients:
  • 1 package (250g) of cream cheese, softened 
  • 1 heaping cup of salsa,
  • 1/2 cup of shredded cheese (I used cheddar the first time, marble the second [pictured], and mozzarella would be delish as well... cheese-wise, anything goes!)
  • diced green onions, for garnish (I used 1/3 of a green onion for the version pictured - could use more or less, depending on your personal preference)

How To:

1. Spread the entire package of cream cheese onto your dish.

2. Top with salsa, spread evenly.

3. Add the shredded cheese on top of the salsa.

4. Microwave for 45 seconds (or until the cheese is melted).

5. Garnish with the green onions.

6. Serve with crackers, chips, and/or veggies.



That's it. Easy and delicious.

recipe > chicken broccoli alfredo

Growing up, I was well known to family and friends as the pickiest of picky eaters. Contrary to popular belief, nowadays I actually like to eat broccoli. Normally, I prefer French fries potatoes but have come to the realization that I must include green things in my diet to stay healthy. Though I am still not a particularly adventurous eater, I do eat things like broccoli and spinach to the amazement and shock of my brothers. 

Here is my second official recipe: Chicken Broccoli Alfredo, a la Jen...

P.S. My apologies for the lack of step-by-step photos... I decided to post this recipe as I was pulling it out of the oven, and took a few pictures before digging in. Enjoy.




Ingredients:
  • 2 boneless, skinless chicken breasts
  • broccoli (as much as your heart desires... I used approximately 3 cups)
  • 1 package (450 grams) of farfalle (bowtie) noodles
  • 2 jars (410 ml) alfredo sauce (I used Classico Alfredo + Roasted Garlic, but there are lighter options that would be delish)
  •  dash of Italian seasoning

How To:


1. Fill two saucepans with water. One is to boil/cook the chicken, and the other is to boil water for the noodles.

2. While water is boiling, cut the broccoli into bite size pieces. Set aside.

3. Cook the noodles according to package instructions. I cooked the farfalle noodles for 13 minutes, and the chicken for a bit longer - about 15 minutes (it was fully thawed).

4. Steam the broccoli.

5. Preheat the oven to 350 degrees.

6. In a 9x13 baking dish, I spread the contents of the first jar of alfredo sauce.  Spray the dish with cooking spray or extra virgin olive oil first.

7. Drain the noodles and add to baking dish.

8. Cut the cooked chicken into bite size pieces, and add to the baking dish.

9. Once steamed, add the broccoli to the baking dish.

10. Add the second jar of alfredo sauce to the baking dish, and mix well.

11. Add a dash (or three) of Italian seasoning for taste.

12.  Bake at 350 for 8-10 minutes.

recipe > wonton pizza bites

Today, I'm stepping out in a bold new direction, one this blog has not yet traveled in: into the foreign domain of... recipes. Still considered a DIY attempt and more delicious then the average spray paint project, this recipe would fall under the 'domestic adventures' category I mentioned way back in the very beginning...

I have adapted this recipe from similar ideas found on Pinterest (of course) as well as a Mediterranean version from Kraft Canada.

These little pizza bites are the perfect appetizer for any celebration: a baby or bridal shower, a potluck, a BBQ, a Superbowl party... any night of the week ending with 'y'... they're always a hit.

Without further ado, here is my first recipe...


Ingredients:
  • wonton wrappers (see the photo below for a visual reference... I had no idea what to look for the first time these were on my grocery list!)
  • 1 jar of tomato sauce - marinara is also a delicious option. (Side note: you probably won't use the whole jar, I typically use 1/2 to 2/3 of the jar)
  • pepperoni
  • cheese - I use mozzarella, cheddar, and parmesan
  • optional: veggies: mushrooms, peppers, pineapple... anything you'd put on your pizza!
Side note: I didn't use exact measurements for the ingredients because I typically wing it and use slightly different amounts of ingredients each time I make these -  depending on how many won ton wrappers I use or what the occasion calls for.

How To:

To start, lightly spritz the muffin pans you'll use with a cooking spray. Place the wonton wrappers in the pans (I've used different sized pans with no issues), one wonton wrapper per cup.

 

Press the wraps into the muffin cup with your fingers, so that they look like this:


Bake at 350 degrees for 6 or 7 minutes. The wonton wraps will be lightly browned at the edges. I use these 6 or 7 minutes to prep the fillings (pepperoni, cheese, veggies, etc.).


This is where I become a one woman assembly line of pizza magic... First, a spoonful of sauce into each wrapper. Secondly, a bit of cheese. Next is the pepperoni, topped with veggies and more cheese.


Once all the wrappers are full, I pop them back into the oven (still at 350 degrees) for another 7 or 8 minutes (until the cheese is melted).


Cool and enjoy.
Bon appetit... or as the Dutch say, "eet smakelijk!"
